Swadesi fits the bill for the coffee and cafe culture I am currently after: inventive twists blending traditional techniques with bold combinations from across the globe. There is thought and care put into something as simple as the daily ritual of coffee but instead of the rush to grab and go, there is a specialness to each creation that makes you want to sit awhile. Their summer menu is still going strong with drinks like Key Lime Matcha (ceremonial-grade tea, house-made citrus syrup, coconut milk, and topped with cold cream), Espresso Tonic (bright tonic water with bold espresso and a slice of orange), Corn and Saffron Latte (organic honey-saffron infused syrup, sweet corn cold cream, sea salt, and espresso). I spoke to Swadesi’s general manager, Anumoy Das about creating the new menu, paying homage to roots, and the not to miss mango cruffins.
The summer menu features more options to cool down while caffeinating beyond the usual iced tea or coffee. There are seasonal ingredients being used in inventive ways and unexpected pairings. What was the process like for creating the new summer drinks?
Creating summer drinks is always fun for me, I usually look for two things, something fruity and sparkling, or something creamy and smooth over ice, like a nice medium drink. Summer is the perfect time to play around with fresh flavors like rhubarb, strawberries, blueberries, summer corn and all kinds of seasonal fruits. I also like to experiment with what pairs well with our coffee blend, so people can enjoy a beautiful cup with flavors that really complement the sunny weather.

So much of Swadesi's menu is based on traditional Indian flavors and dishes but with bold contemporary twists. How do you find the balance between paying homage and reinvention?
For me, it’s about following the roots of each dish while finding ways to reimagine it that feel exciting and relevant and what’s popular among the people. Also, not being afraid to push it in a new direction.
What is your favorite beverage and food combo currently on the menu?
My favorite food combo is actually pretty simple. While I love creating flavor profiles for our customers, when it’s time for me to enjoy something myself, I always go for our most popular and delicious breakfast sandwich with a classic cup of cappuccino. It’s the perfect comfort combo and for something sweet, finishing with our seasonal mango cruffins.
