The Whipped Ricotta Toast is nothing short of mouthwatering; creamy ricotta contrasts perfectly with the smoky, charred bread beneath it. The Vitello Meatballs are another must-order. Unlike traditional meatballs that rely on pasta or heavy sauce, these stand confidently on their own. They are rich, tender, and deeply satisfying. Then there’s Chef Saul Ramos’ famed Charred Octopus, a dish he’s been perfecting for over a decade. The result is exceptional: impossibly tender octopus paired with roasted Calabrian chili sauce that adds depth and warmth without overpowering the dish. It’s so good you may find yourself wishing you ordered more. While generous, these appetizers strike the perfect balance—filling enough to enjoy, yet light enough to leave room for what’s to come.
